Today was the first day that I didnt get up and run. I am so tired! I only got about 3 to 4 hours of sleep last night. Just could not get comfortable…would doze for a bit, then would be awake for an hour or so. Ugh.
Tonight is the BBQ Cookoff, though, so Im looking forward to having some fun! This is the first year Ive been invited to a tent that I dont have some sort of conflict going on.
Also, my goal for today is to clean my desk off. At this point I cant even see it.
Other items from this week:
1. I need groceries!
2. I ran my first golf committee meeting. I felt like it went well, but that could just be me being hopeful. Ha!
3. This weekend the Salinas twinkies have a birthday party. I cant wait!
4. Also this weekend….casino trip! Anyone wanna go??

Im tired of the cold weather. Ive had the heater in my office on since I walked in this morning! If I had been smart I would have made some nice, hot coffee with my breakfast this morning. I just cant quite get warm!
I did run today…got up a little earlier so I had a little more time. Then had one low fat waffle with sugar free syrup. And one ounce of almonds. I just really wanted something salty! For lunch I had my chicken chili leftovers….still yummy the second time!
February 22, 2010
I used black beans and pinto beans and corn instead of all white beans. Turned out great to me! I used all low sodium/ low fat things of course…even the chicken broth. I hate so much salt being in things. I also doubled up on green chiles instead of jalapenos/chiles. Im getting better about spicy, but I knew jalapenos would be too much. I could eat green chiles on just about everything, anyway! One of my fave toppings.
Original ingredients:
1 onion
3 cloves crushed garlic
1 can diced jalapenos
1 can chopped green chiles
2 tsp cumin
1 tsp oregano
1 tsp cayenne pepper
2 cans chicken broth
3 cups chopped/shredded chicken breast
3 cans white beans
Cook the onion until soft….then add everything BUT the broth, chicken and beans. Cook that until soft…then add the rest and simmer 15 minutes. Easy!
Monterey Jack cheese for topping
I had a REALLY good weekend! And it has been a while since I have been able to say that….but it was a blast! Saturday Summer came in to help celebrate my birthday, and we had such a good time.
Thanks to her and Cristina for putting it together and dancing with me until 2 o’clock closing.
Love ya!
Sunday Summer and I had breakfast/lunch at my fave weekend spot…Fountainview Cafe. I just love watching the people in there…so many different kinds of people enjoying good food on a Sunday afternoon. Then we went to Crave Cupcakes for some sweets. Those cupcakes are my FAVE. Absolutely amazing. But so sweet. I had to come home and brush my teeth before my teeth started to develop cavities! And weirdly enough…I ran into Angel Fondren while I was there! I really dont think I have seen her since high school, and she doesnt actually live in Houston, so that was completely random. So cliche, but so true….it really is a small world!
This morning I started my official “I want to run a 5K” training. Ha. I know, that isnt that far…especially with all these people that I know that run half and full marathons. But when you stopped running for about 10 years, that IS far! Also, it is part of my “I dont want to be fat” anymore goal. Ive been doing pretty well on the eating front for the past week or two…never mind the afore-mentioned cupcake.
Now I need to add in the exercise side. I am definitely one of those people that needs a set goal to get anything done with exercise. Ive let myself get too lazy to just go do it. Hence the 5K goal. I have six weeks! Granted, I actually started last week. But then I got sick. So that progress went out the window. But here is to a new week….and a new start!
P.S. I thought I broke a toe last night after I stubbed my foot so hard into my bathroom door that I actually sat on the ground and cried. I wont say that I was tripped on purpose….but I will say that I think Caesar was being a little over-enthusiastic in his bid to get my attention for more food. He did not accomplish his goal.

I thought the Tiger press conference was HILARIOUS. I mean, I have to admire him for saying anything…and he did seem to be sincere. But still…HILARIOUS. I for one dont think he necessarily needed to say anything. But I dont really think famous people owe the public any kind of apology for actions like Tiger’s….I think it just feeds the situation to keep bringing it up. If you are really moving on, you dont need to address anything. Just live your life right, dude. Again, I did feel he was sincere. But that didnt stop me from being entertained!
Best parts:
1. Saying Elin needed praise, not blame, and that she didnt attack him. I dont think anyone was blaming her for any of that….even if everyone in the world thinks she DID attack him. I really believe most of us were saying “You GO, girl”…
2. Referencing his movement away from his Buddhist upbringing. Why do people only bring up religion when they mess up??
3. His acknowledgment that he thought he was above the rules. Well, DUH. 1560 this morning was talking about how if he wasnt so rich, and wasnt such a great golfer, he would be the dorkiest dude on the planet. AMEN. No freakin wonder he went on a power trip of outlandish behavior.
4. I also LOVED how he said his apology to Elin needs to be in actions, not words. AMEN, again!
On a side note, I hope Elin is at home making a list of all the things he needs to do and buy before she will talk to him. Ha! I also think it was the right decision for her not to be there….the emphasis would have been way more on her presence than anything he was saying.
I swear, this has been a super long week. And I wasnt even at work for most of it! My birthday holiday was Monday, I went home sick Tuesday, went in for a bit but ended up back at home on Wednesday….Thursday was my first full day. Now….if only all weeks could be like that.
Im in need of a lottery win, I do believe.
Last night I felt well enough to seriously clean my apartment…poor Caesar was so confused. He kept running from room to room…he didnt understand why there were so many things happening at once! Washing machine, dryer, vacuum cleaner…he thought I had lost my mind!
Happy Friday! Hope everyone has a GREAT weekend!

My nook inside my pretty case that I got in today! Now it is safe to
carry around outside the house. Yippy!

Sunday I had my birthday lunch with the family at Saltgrass….so I had steak and shrimp. Which doesnt count, because it was for my birthday! Duh! That night I had a grilled chicken and spinach wrap for dinner.
Monday I had an egg beaters wrap and oranges for breakfast, an omelet for lunch, and I was bad for dinner in that it was Red Robin time. Again, for my birthday! Ha!
I was good and didnt eat too many fries, though.
Yesterday I ended up at home sick, but before that I had my crock pot leftovers with chicken and sweet potatoes. Tasty…but too many sweet potatoes. Standard snacks during the day, and last night I used my left over steak to make a tasty wrap with baked pita chips and a small serving of Wholly guacamole. I love that stuff.
Today I feel better…even though my ears arent quite right, still! But I started off with eggs, low fat jack cheese on a low fat flat bread with sides of oranges. YUM. Lunch will be event food…maybe I will get the veggie plate again. Hmm.
